superbowlin'

on sunday, we used the superbowl as an opportunity to get busy in the kitchen! we jump after any chance to eat good food, of course.

here's what we had:

grilled corn salsa
inspired by my new roots


parmesan edamame
inspired by 28 cooks
our edits:
1/3 cup olive oil
1/4 cup panko italian bread crumbs
1/4 cup grated parmesan cheese
1 tsp salt



cookie pie
inspired by eat live run


bruschetta
ingredients:
1 loaf of italian bread
6 plum tomatoes
2 crushed garlic cloves
1 handful of basil
3 tbs olive oil
1 tbs of balsamic vinegar
1 tsp red pepper flakes
sea salt
black pepper
1/4 cup romano cheese
1 additional tbs of olive oil

directions:
Brush bread with olive oil and/or butter, bake at 350 for about 10 minutes or until golden-brown. Dice tomatoes, crush garlic, and ribbon basil. Place 3 ingredients in a medium sized bowl - add olive oil, balsamic vinegar, and red pepper flakes. Mix until combined and add salt and pepper to taste. Spoon mixture onto warm bread, top with romano cheese and extra olive oil.



cinnamon sugar almonds
ingredients:
1 cup sugar
1/4 cup water
about 1 tbs of cinnamon
2.5 cups almonds

directions:
Mix first 3 ingredients in sauce pan over medium heat until blended. Add almonds and stir constantly until sugar mixture crystalizes - approx. 10 minutes. Cool on wax paper.


unfortunately we didn't catch pictures of all of our food, but we'll share the recipes for everything else in a separate post! veggie chili, meatballs, drinks!
