adios eggs.

time to say goodbye to all the easter eggs!
egg salad sandwiches 
 inspired by ree drummond

10 hard boiled eggs
2 avocados
1 tablespoon dijon mustard
4 tablespoons of light mayo
3 teaspoons red wine vinegar 
1 tablespoon chives
kosher salt
pepper

directions:
peel and rinse hard boiled eggs. place into a large mixing bowl. 
 remove pit from avocados and scrape into the bowl. mix until combined.
 add mustard, mayo, vinegar, chives, salt, and pepper. that's all :)

put a spoonful or two on toasted bread & slap a tomato on it! delicioso
