the chili diaries, part 2.

white chicken chili!
recipe adapted from jenna's creamy white chicken chili

1 yellow onion - diced
1 lb. chicken thighs - cubed
2 tB. vegetable oil
2 garlic cloves- minced
2 tB. butter
2 tB. flour
splash of milk
1 tsp. salt
1 tsp. oregano
1 tsp. cumin
1/2 tsp. cayenne
2 ts. chili powder
2 cans cannelinni beans
2 cans diced green chiles
1 can chicken broth
1 cup sour cream
1/2 cup half & half

heat oil over medium heat. saute chicken and onions until chicken is seared and onions are translucent. add garlic cloves and cook for three more minutes. move ingredients to one side of the chili pot.
 melt equal parts butter and flour to create a roux. add a splash of milk. 
stir together until it creates a gravy-like substance. stir roux into all other ingredients. 
add spices, beans, chiles, and chicken broth. bring to a boil and then reduce to simmer for 30 minutes. remove from heat and add sour cream and half & half.
serve with cheddar cheese.
(and more sour cream + oyster crackers if you are feeling frisky!)

this might be my favorite chili ever.
