the chili diaries, part 6.


pop's meaty spaghetti chili
 disclaimer: dad swears he can't give me a recipe and this is all to taste.
these are my estimates after watching him make this every sunday that football is on tv since i can remember.

brown 2 lbs. of hamburger meat 
add: 2- 6oz. cans of tomato sauce
4- 6oz. cans of water
4 tB. chili powder
1 ts. salt
1 ts. pepper
1 can brooks hot chili beans
a dash of cayenne pepper
2 ts. of garlic powder
 1 tB. chopped dry onions
half dollar size of spaghetti noodles 
in a spice ball:
3-4 bay leaves
3 red chili peppers (break them in half)
stir all ingredients together and cook on medium heat for about 20 minutes - stirring regularly.
turn heat down to low and cook for hours and hours!! make sure to stir occasionally.
serve with shredded cheese and skyline crackers.

*if chili is too soupy, add more spaghetti or a little corn flour to thicken.
**also, if you'd like to cheat... buy carroll shelby's chili kit (at Kroger) and just add more spices to taste
***can be made gf by using gf spaghetti noodles 

this is a staple for football sundays with dad.
our dinner after a healthy lunch of a million pepperoni, cheddar, and sociables cracker sandwiches.
so nostalgic. and the best when he makes it!
