caprese sandwiches.

so in the midst of our crazy week we made time for some killer food. 
well, maybe just one killer lunch!
this is a quick and easy meal. 
and it's a totally fancy take on one of our favorite things... g r i l l e d c h e e s e

ingredients we used:
4 slices of kroger's toasted sunflower honey loaf
2 vine-ripened tomatoes
1 tB. olive oil
salt & pepper to taste
1/2 cup balsamic vinegar
3-4 oz. fresh mozzarella
8 basil leaves

preheat oven to 400. place sliced tomatoes on a foil-lined baking sheet and drizzle with olive oil, salt, and pepper. cook for about 30 minutes. while tomatoes are roasting, bring balsamic vinegar to a boil in a small saucepan. reduce to low heat and cook for 10-15 minutes, until the liquid reduces by half. remove from heat and let sit. once tomatoes are finished, heat a skillet over medium heat. brush the bread with olive oil, then place mozzarella on one side, followed by tomatoes and basil. cook until the cheese is melty and the sides are golden. drizzle with balsamic vinegar and eat immediately!
