potato soup.

now i know you all used the detox tips from yesterday, so here's a little something to refill your bellies... 
recipe adapted from eat, live, run (congrats on your engagement jenna!)
potato soup!
**with a little kick

2 poblano peppers
1 large yellow onion- diced
1 green bell pepper- diced
3 potatoes- peeled and diced
2 celery stalks- diced
6 slices of bacon
2 tsp minced garlic
1 quart chicken broth
2 tsp salt
2 cups milk
1/4 cup flour
1/2 cup shredded cheddar cheese
thinly sliced green onions

roast peppers on a foil-lined baking sheet under the broiler, turning occasionally until charred.
once charred, place peppers in a ziplock baggie for about 20 minutes. remove the skin and dice. while the peppers are cooling fry the bacon in a large pot. remove bacon and save for later. add onion, bell peppers, garlic, and celery. saute over medium heat until tender. add potatoes and poblano peppers. toss together. pour in broth and add the salt. bring to a boil, then reduce heat and let simmer for 45minutes or until potatoes are tender. add milk and flour. whisk together until smooth and simmer for another 10mintues. remove from heat and add cheese. serve with bacon and green onions. mMMmM

this soup is surprisingly easy to make. it's also the best potato soup i have ever tried!
it's not orange and full of cheese like popular restaurant soups-
there is REAL potato flavor in there!
now go make some! it will really warm you up and you don't have to feel guilty eating it.
*can be made gf by using gf chicken broth and gf flour
