last week, i finally made THIS salad that i talked about, posted about, and dreamt about for at least a month. but! i changed it up a little and now i can't stop eating it.
per usual, when i got around to making this, it wasn't planned out. i had managed to add a mango to my grocery list and then crossed my fingers that i had everything else needed to follow the recipe. i didn't. but it ended up being a blessing in disguise. i had some kale on hand, so i just threw all of the suggested ingredients on top. i was all out of both agave nectar and honey, so i concocted my own little dressing. say hello to heaven my friends.
kale & mango salad (single serving)
handful kale, cut in strips (or spinach)
1/3 cup corn
1/2 cup black beans
1/4 cup red onion, diced
1/3 cup mango, cubed
1/3 cup avocado, cubed
sprinkle of chopped cilantro
dressing (single serving)
1 tsp rice vinegar
1 tsp evoo
squeeze of lime
sprinkle of salt, pepper, & sugar
