brownie bites.

ingredients: 1/2 cup coconut oil, 2 eggs, 3/4 cup sugar, 1tsp. vanilla extract, 3/4tsp. baking powder, 1/4 tsp. salt, 1/2 cup cocoa powder, 3/4 cup almond flour
directions: preheat oven to 350 degrees and add paper liners to your mini-muffin pan. melt coconut oil slightly, but not completely in microwave- about 30 seconds. add ingredients to a large mixing bowl in the order listed above. whisk together to combine. scoop batter into muffin tins until about 3/4 full. bake for about 15 minutes. eat!

i decided to place the batter into a mini-muffin pan to create 24 brownie bites. since they are small, it's okay to have 3 or 4, right? i think it is. i was super impressed with the way these brownies turned out. they are the most similar brownie to life before gluten and dairy allergies! thank you, thank you to minimalist baker for the delicious treat. these are the perfect snack for on the go or an after dinner treat.
