homemade granola bars!

looking for a quick and easy treat? you gotta try these peanut butter granola bars!
these were perfect for our little road trip to nashville last week. can we just talk about how good granola/granola bars are for a second? i mean, they are great for breakfast, great for a snack, and great for dessert. i'm telling you i could eat them everyday...

ingredients: 2 cups gf oats, 2 tB. flax seeds, 3/4 cup creamy peanut butter, 1/3 cup dark chocolate chunks, 1/3 cup maple syrup, 1/4 ts. salt

directions: place dark chocolate chips in a chopper. once they are in small pieces add to a large mixing bowl. add all other ingredients and mix to combine. spread into a lightly greased and parchment lined glass pan. press down firmly with an offset spatula. bake for 30 minutes at 350 degrees. let cool. place in the fridge to harden. store in fridge for up to a week.

these were super easy to make and super delicious to eat, just as promised. this recipe is a great way to make one of your favorite snacks at home- dairy free, gluten free!
**a recommendation for those of you who have a love/hate relationship with maple syrup like i do. (i know i may be the only person, but really sometimes that smell just gets to me. ha) you can replace the maple syrup with agave or honey, which i plan to do next time i make these gems! and there will definitely be a next time!
