use what ya got.

so last week i threw whatever i had on hand in my kitchen into a bowl and hoped for the best. i have to say, it worked out pretty well for me. i have been under the weather for weeks, living on soup and really unhealthy things, so a bowl of all things good and healthy was just what my body needed. 

what i used:
1 can of black beans
1 can of garbanzo beans
3 roma tomatoes
2 cups of sun sugar tomatoes
1 avocado
handful of chopped cilantro
1/2 lime (squeezed)
1/4 cup of evoo
1 tsp cumin
salt & pepper

this meal calls for very little prep, which is glorious. just cut up the veggies, chop the cilantro, and rinse the beans. all of these goodies can then be thrown in a bowl together. next, in a small bowl, i missed a little oil with lime juice, cumin, and salt & pepper, before mixing it in with the beans and veggies. it made for a nice little salad and perfect for lunch. next time i think i'll try to add in a little bowtie pasta and mix in some balsamic dressing instead, maybe even some cucumbers. and by next time, i probably mean next week :)
