gluten free coffee cake!

okay so i have been craaaving a crumbly cinnamon coffee cake for weeks now. i may have gone back to my old ways if it weren't for this awesome recipe from love and lemons! i whipped up this cake late saturday night and it made for the most perfect sunday breakfast. totally satisfied my craving! i just had to share this recipe with you guys in case someone else is out there dreaming of gf coffee cake ha... so please don't judge the phone photography- thanks :)
ingredients:  for the cake: 2 tB. earth balance butter spread, 1.5 cup almond flour, 1/2 cup oat flour (you can just use your blender to crush your oats if you don't have the flour on hand), 1/3 cup sugar, 1 egg, 3ts. baking powder, 3ts. cinnamon, 1/2ts. salt, 1 1/4 cup almond milk, 1ts. vanilla extract for the topping: 2tB. earth balance butter spread, 1/2 cup brown sugar, 1/2 cup almond flour, 1ts. cinnamon                                                          
directions: combine sugar, butter, almond milk, egg, and vanilla with your mixer. set aside. sift together flours, baking powder, cinnamon, and salt into another bowl. gradually add dry ingredients to wet ingredients until fully combined. grease a pie pan and fill with batter. make topping by combining all ingredients in a bowl with a fork. mix until crumbly and drop half of the mixture into the batter with your hands. bake at 375 degrees for 30 minutes. sprinkle the other half of topping mixture on the cake and bake for 5 more minutes or until a toothpick comes out clean.

this coffee cake was a total hit with everyone in the family.... gf or not, everyone loved it's gooey inside and crumbly topping. when an entire cake disappears in less than 24 hours you know you did goooood! are you gf and missing some of your old treats? experiment with gf flours and you can have them all again! anddd please share some of your favorites w/ us.
