banananana bread.

samma found this ah-maz-ing recipe and of course i did a little gluten and dairy free magic to change it up just a bit! but guys- can you say success?! finally!!!!!!!! success on the first try! you may not get how life changing this bread really was for me. my baking has not been up to par since going gluten free and dairy free, but i can say that i wouldn't change one thing about this bread!

5tB. of dark chocolate peanut butter, 3tB. of vegetable oil plus 1tsp.-divided, 3tB. softened earth balance spread, 1/2 cup dark brown sugar, 2 medium ripe bananas-mashed, 2 large eggs, 1 1/2 cups almond flour, 3/4tsp. xanthum gum, 3/4tsp. baking soda, 1/2tsp. baking powder, 1.2tsp. salt, 2/3 cup of almond milk, 1/2 cup dark chocolate chunks

melt the dark chocolate peanut butter and 1tsp. of vegetable oil in the microwave for about 20 seconds. stir together until combined, set aside. add softened earth balance, brown sugar, and mashed bananas to a large bowl and mix until combined. then add eggs, one at a time, mixing well after each. combine all dry ingredients together in a separate bowl. with the mixer running, alternate between adding the dry mixture and the almond milk to the batter. once combined pour half of the batter into a greased bread pan. pour in all of the chocolate peanut butter mixture and top with the other half of the batter. swirl batter around with a knife. top the bread batter with the chocolate chunks. bake at 350degrees for about 45minutes or until a toothpick comes out clean. allow to cool completely before removing the bread from the pan.

this bread may or may not have been devoured in under 24 hours. with no thanks to samma either! sorry lady for being stingy. you've gotta try this bread you guys- gluten free/dairy free or not!
