squasshhhhh.

want a peak at our favorite go-to, late night meal?
good thing! this just might be the best meal made in our new home to date. it is so simple and hardly counts as a recipe, but the flavors are amazing! i could honestly eat some variation of this dish everyday for every meal. and if you're thinking butternut squash is just for the fall..... think again.
ingredients: 1 whole butternut squash, 3 large handfuls of spinach, 4 eggs, 1 large avocado, 1/2 a red onion, 2 cloves of garlic, olive oil, salt & pepper, cumin

directions: peel butternut squash and chop into cubes. place squash on a baking sheet and drizzle generously with olive oil. stir to ensure squash is fully coated. sprinkle with salt, pepper, and cumin and cook at 375 for 30-45 minutes or until squash is soft. heat 1tB. of olive oil in a pan over the stove. chop onions and mince garlic. add to hot oil and cook until soft and translucent. add spinach and saute until wilted. cook eggs over-easy or as desired. plate with squash, onions and spinach, and top with egg and avocado. tastes amazing with a little feta on top too! makes 3-4 servings.

seriously, this was so delicious. it's hard to put my love for this dish into words, so please just take our word for it. keep a butternut squash in the fridge at all times and then try this one night when you see it in there looking lonely :) add whatever veggies you have on hand for variation and a really simple yet great meal.
