love muffin.

soooooo i made these muffins on sunday after valentine's day...for my loves...or maybe for myself ;) they had been on my mind for weeks. the plan was to make day-after donuts, but i was without milk and muffins always sound a bit more healthy. ha right?! i feel as if i have basically been eating brownies for days.

anyway, back to these muffins. they look irresistible, don't they? i couldn't resist. i made some tweaks to meet our "gluten FREEdom" lifestyle. they turned out really delicious. the strawberries and dark chocolate are a perfect combination. they turned out little dense, but delicious nonetheless.

here's my recipe:
2 cups gf all purpose flour
1 cup cocoa
3/4 ts. xanthum gom
2 1/2 ts. baking powder
1/2 ts. baking soda
1/2 ts. salt
2 eggs
3/4 cup sugar
1/4 cup brown sugar
1/2 cup vegetable oil
1 1/2 cup greek yogurt
2 1/2 ts. vanilla
1 cup strawberries, diced
4oz. dark chocolate chips
sugar in the raw for topping

preheat the oven to 350 and prepare a muffin tin. combine all dry ingredients in a medium bowl and whisk. set aside. in your mixer, combine eggs, sugar, oil, yogurt, and vanilla. slowly add dry ingredients to wet ingredients. mix on low until just combined. gently fold in strawberries and chocolate chips. be careful not to over mix. use an ice cream scoop to add equal amounts of batter to muffin tin. cook for 10 minutes, then add chocolate chips and sugar to the top of the muffins. return to the oven and bake for another 5-10 minutes. then eat them all!
